Best Mexican Food Recipe

Hello Everyone! Today I’m gonna present you the best mexican recipe i’ve ever encountered.  This recipe was born inside my hungry brain while I was on my way to the grocery store, and being a huge mexicano food enthusiast it suddenly crossed my mind that I should absolutely have a taste of it and have a jump into this culture-rich culinary adventure. 

This is a one-pot recipe, so all you need to do is to create a meat base filling, and then start rolling. You can improvise and make multiple mexican dishes with this same meat filling. Today I’ll make some Soft Shell Tacos, some Burritos and Some Stand n’ Stuff tacos. These are all the ingredients that you need for 5 amigos:

  • A Green Pepper
  • A Yellow Pepper
  • A Red Pepper
  • A Red Onion
  • 4 cloves of garlic
  • 3 limes (for juice and zest)
  • 1/2 kilo(1.1 pounds) of minced chicken meat
  • 400 grams(0.8 pounds) of Red Kidney Beans
  • 300g(0.6 pounds) of Cheddar
  • 300 grams(0.6 pounds) of canned corn
  • One cup(according to your taste) of freshly ground black pepper, smoked sweet chilly powder, curcumin powder, sea salt and a pinch of smoked hot chilly powder.
  • A couple of Fajitas and some Stand N’ Stuff Tortillas
  • One jar of jalapeño
  • A tablespoon of Butter

The Preparation of the meat filling:

First you have to melt the butter in the frying pan and then add the minced Peppers. After they cook a little, add the minced chicken meat, the spices and start stirring. Meanwhile, mince the garlic cloves in a bowl, mix it with a little oil, salt and let it sit for a couple of minutes.

After stirring in it for 5 minutes it’s time to add the Red Kidney Beans, the Onion, a little cup of water and stir for another 5 minutes, then add the minced garlic gloves. After another 5 minutes of cooking take the frying pan off the fire, and put the meat filling in a bowl.

You’re almost done, here comes my favorite part, the rolling..!

You have to cook the fajitas and the stand n’ stuff tortillas a little before rolling and stuffing (Key Tip). You can do it in the microwave with a drop of olive oil on each side, but personally I prefer to do it traditionally in the frying pan because it crisps up a little.  

After that, lay them on a board and start adding the ingredients. Here are some pictures that’ll make it more easier for you:

Burrito:

  • Cheese

Soft Shell Taco:
